Apple and Celery with Blue Cheese

Ingredients:


4 ounces blue cheese
1/2 cup mayonnaise
1/2 cup buttermilk
1/2 teaspoon sugar
4 granny smith apples
2 stalks celery

Method:

  • Take a small bowl and combine the blue cheese, mayonnaise and half the buttermilk with a fork till it becomes thick.
  • Stir in the remaining buttermilk and sugar. Refrigerate this mixture.
  • While the cheese mixture gets chilled, wash and core the apples.
  • Coarsely grate the apples and mix them with the cheese mixture.
  • Thinly slice the celery stalks. Combine with the apples and cheese.
  • Cover the bowl and refrigerate.
  • Add some ground black pepper if desired.
  • Serve immediately, and avoid storing this dish for too long due to the pungent smell of blue cheese.
