What is the substitute for creme of tartar?

Although there is no prefect substitute for cream of tartar, two of the closest substitutes would be vinegar and lemon juice. However both these may have to be used in slightly larger quantities (almost 3 times more) when substituting cream of tartar. It is also important to remember that food products prepared by using substitutes like lemon juice and vinegar may turn out slightly different as compared to those prepared using cream of tartar.

If a particular recipe requires baking soda and cream of tartar and if the latter is not available, it makes more sense to use just baking powder as a substitute instead of cream of tartar and baking soda. You can use a teaspoon of baking powder for every ½ teaspoon of cream of tartar and ¼ teaspoon of baking soda. This kind of substitution may however alter the weight, taste, texture and moisture content of the product.
