Toast with Strawberries

Ingredients:

2 eggs
80ml (1/3 cup) milk
Melted butter, to grease
4 slices raisin bread
125ml (1/2 cup) thickened cream
1 tbsp icing sugar mixture
1/2 tsp ground cinnamon
1 x 250g punnet strawberries

Method:
  • Preheat oven to 160o C.
  • Wash strawberries and remove the tops.



  • In a medium bowl, beat the eggs till fluffy.



    Add milk little by little and whisk together.
  • Take a non- stick frying pan and heat over medium flame.



  • Grease the pan and brush melted butter on it to lightly grease.
  • Now dip 1 slice of bread into the egg mixture and leave it in for a few seconds to make sure it gets coated evenly.
  • Place this bread slice on the pan and cook each side till golden brown.
  • Transfer the cooked slice on a baking tray and place in the oven to keep warm.
  • Lightly grease the pan again and repeat the same procedure in 3 batches with the remaining slices of bread.
  • Take the cream in another bowl and whisk using a balloon whisk  Keep adding little amounts of sugar into the cream  Add ground cinnamon and whisk until soft peaks form.
  • Take out the toasted slices from the oven and cut each in half crossways.
  • Place in plates and top the toast with cinnamon cream and strawberries.
  • This dish is best accompanied with hot espresso.

  • Raisin bread is a healthy option instead of plain bread, as raisins are a great source of iron, which helps the blood to transport oxygen.
  • This recipe has a high fat content, especially of the saturated kind.



    To make this healthier and heart friendly, cream can be substituted with low fat single cream or flavored yoghurt.



  • Eggs provide good quality protein through this dish.



    For decreasing fat content, only the whites of 4 eggs can be used instead of whole eggs.
  • Cinnamon adds a delicate flavor to the cream. Cinnamon sugar can also be used to top the toast while cooking for adding crunch.
  • This dish is a great breakfast option and good way to give eggs and bread to kids who are fussy about eating!
