Raspberry Parfait |
Raspberry Parfait No of Servings : 4 Preparation Time: 15 minutes Total Time : 15 minutes
Ingredients: 1 envelope unflavored gelatin 1/4 cup cold water 10 ounces frozen unsweetened raspberries, thawed 1 cup plain non-fat yogurt 1/2 teaspoon pure vanilla extract 2 egg whites at room temperature 1 teaspoon crystalline fructose 1 tablespoon slivered blanched almonds
Method:
- Take some cold water in a bowl and put the gelatin in it.
Take hot water in another bigger bowl, and place the first bowl over it to dissolve the gelatin.
- Beat the yoghurt with the vanilla extract.
- Now stir in the raspberries and yoghurt and blend into the dissolved gelatin.
Chill this mixture.
- In the meantime, beat egg whites till they are frothy and stir in the fructose little by little.
Keep beating till the egg whites form small peaks.
- Take out the raspberry mixture from the refrigerator and fold into the egg white mixture.
- Chill until the raspberry parfait is completely set.
- Serve in parfait glasses with almonds sprinkled on the top.

Health Tips:
- This is an excellent recipe for people with diabetes mellitus.
It can be consumed as dessert, without the high calories and fat!
- We use egg whites instead of whole eggs, so that the fat can be minimized and we still get good quality protein.
- Non fat yoghurt also provides protein which prevents insulin spikes and regulates the release of glucose into the blood.
- Fructose is used instead of plain sugar, as it has shown to be beneficiary for diabetics.
It gets absorbed slower and is released more slowly compared to normal table sugar, hence preventing fluctuations in blood glucose levels.
- Raspberries are a good source of Dietary fiber, Vitamin C, manganese and a variety of other nutrients which have significant health benefits.
