Question on buck wheat

What is buck wheat and how can you use it?
( 9 Sep 2007)

Buckwheat is the seed of the fagopyrum esculentum plant. It is gluten-free and contains high amounts of rutin and vitamin E which are important antioxidants that help in preventing cellular damage. Buckwheat can be used in the form of groats which is hulled whole buckwheat or kasha which is toasted buckwheat groats.

It can also be purchased as light or dark milled flour.

Buckwheat can be added to gluten-free dishes to enhance its nutritional value. It is high in soluble fiber, antioxidants, minerals and plant proteins and hence is a valuable addition to the diet. You can use buckwheat in the following ways;
  • Buckwheat groats can be used like rice in main or side dishes. They serve as a good alternative to bulgur for taboulli dishes. You can even use groats instead of meat to make healthy vegetarian meals. Buckwheat added to soup improves taste and nutrition.
  • Kasha may be roasted to give it a nutty, hearty flavor. It can also be used in baked dishes and casseroles. You can even have kasha in the form of hot porridge.
  • Buckwheat light or dark flour can be used to make various types of baked foods such as cakes, bread and cookies. The flour may also be used to make soba, a type of noodles.
  • Buckwheat grits are obtained by coarsely grinding milled buckwheat. They can be used to make a wholesome cereal.
  • You can also steep one teaspoon of roasted buckwheat in water for five minutes to make a refreshing tea.
