What are substitutes for mineral oil?

Vegetable oils are preferable to mineral oils - anything except Canola oil can be used - different oils for different uses.

Mineral oil is a byproduct of petroleum refinement. It is often used as a lubricant type laxative. Many baby oils also contain mineral oil. But this oil has many darker shades.
When applied externally it blocks the skin pores and prevents the release of natural toxins from the skin and makes breathing of the skin difficult. When taken internally; it interferes with the absorption of fat soluble vitamins (Vitamin A, D, E and K), calcium, phosphorus and potassium.
You have not mentioned your purpose for using mineral oil. You can substitute mineral oil with various other oils available in the market depending on your purpose like castor oil, coconut oil, rapeseed oil, flaxseed oil, almond oil or soybean oil.
