Avocado, also known as butterfruit is a fruit and mayonnaise is a creamy sauce-like emulsion which can be used for sandwiches. Preparation of Mayonnaise 1cup Salad oil 1 Egg/2 Egg yolks 2 tbsp Lemon juice/2 tbsp Vinegar Salt and pepper Paprika Method - Beat egg or egg yolks till thick and add 1 teaspoon oil at a time beating well, until 1/3 cup has been added. Add a few drops lemon or vinegar.
-The mixture should be quite thick and perfectly smooth.
-Continue to add the oil and acid alternately. -Add seasonings to taste. -Store covered in the refrigerator.
