Foods rich in vitamins A, C and E
Vitamins A, C and E are contained in fiber rich foods. You can make juices or soups from the vegetables or eat them raw as salads.
Green leafy and yellow vegetables, carrots, butter fish liver oil, eggs, cream and tomatoes are rich in vitamin A. It is also found in yoghurt, liver, sweet potatoes, mozzarella cheese, mangoes, spinach, dried apricots, egg yolks, milk and cantaloupe cubes. Although vitamin A helps in lowering stress but too much of it from supplements or animal sources can prove dangerous during pregnancy and become toxic in certain cases.
Vitamin C lowers cancer risk, lowers blood pressure, regenerates the vitamin E in the body and enhances iron absorption. Foods rich in vitamin C are tomatoes, citrus fruits, green peppers, broccoli, bell peppers, parsley, strawberries, lemon juice, oranges, cauliflower, papaya, kale, and Brussels sprouts.
Vitamin E is found in vegetable oils, green leafy vegetables, nuts and wholegrain cereals. It is an antioxidant which protects our cells from the free radicals which can cause cancer and cardiovascular diseases. It also helps in DNA repair and immune function. It can also be taken to help absorb fats. It is found that low birth weight infants are sometimes deficient in vitamin E.
